For breakfast I had another one of my oatmeal favourites; banana nut oatmeal
for it I used:
- 1/3 cup of rolled oats
- a tablespoon of oatbran
- 3/4 cup of coconut milk
- 1/2 a teaspoon of cinnamon
- one large banana (3/4 mashed into the oatmeal, and topped with what’s left)
- a heaped teaspoon of crunchy peanut butter
- a small handful of walnut halves chopped (about 4)
- and finally a light drizzle of honey on top :)
yum yum! I also had about 8 random blueberries stirred into there because they were looking lonely in my fridge :’)
SNEAKY APPLE PIE OATS.
- 1. Chop up one apple into small cubes and mix with some rolled oats and a splash of water.
- 2. Add some cinnamon and natural sweetener and stir through.
- 3. Pop into a microwaveable bowl or large cup and microwave for 4-5 minutes.
- 4. Enjoy! (The apples will become all mushy and the oats will be gooey and sweet! It’s like eating a healthy apple-pie for brekky!)
Today’s afternoon snack:
roasted red pepper hummus on whole wheat toast with spinach leaves, bell peppers, and tomatoes. Salt & pepper to taste!

Bf made this beautiful dish for dinner. Organic ground beef (I don’t eat that) with spinach lightly fried with olive oil, chillies and garlic. Mmm!
